18 each oysters, shucked and washed
150ml Barker’s Professional Ceviche Dressing
50ml extra virgin olive oil
1 each Granny Smith apple, diced
1 Tbsp sesame seeds, toasted
1 Tbsp chives, finely diced
Loosen the oyster in the shell, making sure there are no chards of shell.
In a mixing bowl, add the Barker’s Professional Ceviche Dressing and gradually whisk in the olive oil. Add the apple, sesame seeds and chives.
Spoon this dressing over each oyster and serve.
