200g chilled butter
200g packed brown sugar
350g standard plain flour
400g packed brown sugar
90g plain flour
1 tsp baking powder
1 tsp salt
250g desiccated coconut
4 large eggs
2 tsp vanilla essence
600g Barker’s Professional Fruit Mince
Cut the cold butter into pieces.
Place into a mixer or food processor with the brown sugar and flour.
Mix until the mixture is crumbly in texture.
Press down evenly in a greased baking tin.
Bake for 10 minutes at 160°C.
Place all dried ingredients into a mixer or food processor and mix well.
Add the eggs, vanilla and Barker’s Professional Fruit Mince and blend together until all combined. Do not overmix.
Pour the mixture on top of the base and spread out evenly.
Bake at 160°C for about 40 minutes or until the centre of the topping feels firm and evenly coloured.
Cool thoroughly before cutting.
