Savoury Muffins with Red Pepper & Roast Garlic

Yields 12 standard muffins


Group 1
400g plain flour
28g baking powder
5g salt
1g ground black pepper
180g eggs
40g canola oil
40g melted butter
280g milk
180g Barker’s Professional Red Pepper & Roast Garlic Breadshot
150g grated cheese
10g sunflower seeds
30g pumpkin seeds
10g sesame seeds

Group 2
120g cream cheese


Sieve the flour, baking powder, salt and pepper together.

Mix the eggs, oil, melted butter and milk together. Then mix through the Barker’s Professional Breadshot Filling.

Add the grated cheese and the seeds to the dry ingredients. Then add the wet ingredients and mix until combined – avoid over mixing.

Deposit half of the muffin batter into the muffin cups and place 10 grams of the cream cheese into each muffin.

Then top with the remaining muffin batter and seed mix.

Bake at 190°C for approximately 20-25 minutes.
