Cranberry, Currant & Chia Muffins

Ingredients

475g plain flour
180g caster sugar
25g baking powder
140g melted butter
6g vanilla essence
80g egg
430g milk
230g Barker’s Professional Cranberry, Currant & Chia Breadshot

Method

Sieve the dry ingredients together into a large bowl.

Lightly whisk the eggs, milk, Barker’s Professional Cranberry, Currant & Chia Breadshot and vanilla together.

Add the egg mixture into the dry ingredients along with the melted butter and combine until smooth (avoid over mixing).

Bake at 180°C for approximately 20-25 minutes.
