Croque Monsieur

Ingredients

• 200g Barker’s Professional Cream Style Meal Base

•  80g water

•  12g Dijon mustard (1)

•   4 slices sourdough bread

•   0g melted butter

•   6g Dijon mustard (2)

•  150g grated gruyere or smoked cheddar cheese

•   14 slices champaign ham, sliced

•   chopped parsley (to garnish)

Method

  1. Bring the Barker’s Professional Cream Style Meal Base, water and first measure of mustard to a simmer, stirring frequently. Remove from the heat and set aside.

  2. Brush one side of each slice of sourdough with the melted butter, grill until toasty brown.

  3. On a chopping board, place down each piece of sourdough with the untoasted side facing upwards. Spread each slice with a thin layer of mustard, approximately 25 grams of grated cheese, followed by a slice of ham. Combine two pieces to make one sandwich and repeat again.

  4. Spread a layer of the Barker’s Professional Cream Style Meal Base mixture over the top of each sandwich followed by roughly 25 grams of grated cheese.

  5. Grill at 200°C for at least 10-15 minutes or until the cheese is golden brown and bubbling. Garnish with a sprinkle of chopped parsley.
