Breakfast Loaf with Seville Orange & Fig

Ingredients

270g strong flour
150g wholemeal flour
12g salt
8g caster sugar
28g fresh yeast
25g olive oil
300g water
280g Barker’s Professional Seville Orange & Fig Breadshot
50g rolled oats
60g sunflower seeds
60g pumpkin seeds
15g linseeds
15g sesame seeds
20g chia seeds
80g chopped walnuts
40g water

Method

Prepare a dough from the flours, salt, sugar, yeast, oil and water.

Mix the Barker’s Professional Seville Orange & Fig Breadshot, seeds and nuts together along with the 40 grams of water.

Add the breadshot and seed mixture into the prepared dough and back mix through until clear.

Place into a lightly oiled bowl, cover with plastic and allow to ferment for 60 minutes in a warm place.

Scale the dough as desired, prove and then bake at 210⁰C.
